English Longhorn cattle

Our English Longhorn cattle are a slow growing breed, perfectly suited to thrive amongst our farmland. Our calves are born in the spring just as the grass is beginning to grow and will spend 9-10 months flourishing on their mothers’ rich grass-powered milk before being weaned. Once weaned, they have a diet of 100% grass, grazing the parklands and wild flower meadows in harmony with nature. They grow slowly to around 30 - 36 months of age before being hung on the bone for at least 4 weeks. 30 - 36 months of growing slowly on an entirely grass-fed diet, along with hanging on the bone, ensures our beef has a deep, rich flavour and delightful texture.

Bronze turkeys

Our Bronze turkeys are nurtured from the moment they hatch. During the first 6 weeks of life they are tucked up under heaters within our barn, until they have feathered up and are ready to face the elements. They are then properly free range across our ancient pasture, spending their days running about, chasing bugs and browsing the wild flower meadows, just as nature intended. Our Bronze turkeys are fed on a locally milled grain feed, containing no antibiotics or growth promoters whatsoever! They grow slowly and happily to reach natural maturity. Once they reach natural maturity, they are killed by hand, dry plucked and game hung for about 2 weeks to develop a sensational flavour. Because they are slow grown, our Bronze turkeys develop fatty deposits across the skin, and once cooked result in a sublime, delicious turkey with a fantastic texture.

 Tamworth pigs

Our rare breed Tamworth pigs are properly free range across our ancient woodlands and pasture. They are born outside in their arks, and from just a few days old are out and about exploring with their mothers. They are with their mothers for 8 weeks before being weaned. Once weaned, they forage amongst the woodland and graze the pasture, supplemented with a locally milled grain. Spending their days rooting, foraging, wallowing and snoozing, they really do get up to all things pig. They are slow grown to around 10 - 11 months before being hung on the bone for around 2 - 3 weeks. Once hung, our Tamworth pork is hand butchered into the most wonderful joints, cuts, chops, steaks and sausages. This traditional slow process of rearing, hanging and butchering our Tamworth pork means they develop a rich, earthy flavour with a divine texture.

Romney sheep

Our flock of Romney lambs are born in April, just as the grass begins to grow. Their mothers convert our herb rich and grass rich pastures into nourishing milk for lambs. The lambs make excellent use of this milk, building a strong natural immunity. They are with the mothers until weaning at around 5 months of age, and continue to grow slowly on a diet of 100% grass. During the cold winter months when grass is scarce, we may also feed fodder beet too. Our Romney sheep are ruminants and are not designed to be fed cereals and concentrates. They live as natural life as you can get! This system produces the best lamb; they’re not rushed, they’re entirely grass fed and grow to natural maturity.

Mutton

It’s simple… mutton is sensational! Many moons ago, mutton would have been a staple within the household and has since gone very much out of fashion. Our Romney mutton are the grandmothers of our flock. They have grown incredibly slowly on a diet of 100% grass, producing many wonderful lambs over their lifetime. Once they have finished their breeding life, they rest and relax, grazing ancient pastures developing a wonderful fat covering. Our mutton is usually between 5 to 9 years of age, and is hung on the bone for around 3 weeks before being meticulously butchered and lightly trimmed. The wonderful layer of fat they develop, along with hanging, means our Romney mutton is simply delicious, with deep, rich flavour and a wonderful texture like nothing else!

Lamb

We grow our grass fed Romney lamb to around 8 - 12 months, before being hung on the bone for around 2 - 3 weeks to develop a wonderful depth of flavour and delightful texture. Our lamb is traditionally butchered by hand and meticulously trimmed to produce sensational cuts.

Hogget

Many of our Romney lambs grow slowly beyond 12 months to reach hogget. Our Romney hogget still holds the delights of our lamb, but with a slightly deeper flavour and colour. This is simply because they have grown slowly to around 12 - 18 months and flourish on the first spring grass growth.
